Cooking with Latin I: Ova Hapala

This dish is one Romans would have served during gustatio, or the appetizer course of a dinner.

Ova Hapala (Poached Eggs)

Ingredients:
eggs for poaching

a palmful of pine nuts [also called pignoli]
black pepper
honey
a good handful of fresh Italian parsley (leaves, no stems)
olive oil
some garum* [see note]
vinegar [optional] 

Procedures:

To make the sauce:
Toast the pine nuts in a hot dry skillet, moving them around for about two-three minutes until they are golden brown.
Coarsely grind the pine nuts. Keep a few whole for garnish.
Mix in black pepper and a tablespoon or more of honey to taste.
Add the parsley leaves and continue to grind.
Add some olive oil slowly.
Finally, add some garum and mix.
You should have a runny green paste.
Add more of any ingredient to taste.
If you find the mixture too sweet, consider adding a few drops of vinegar or more garum*
Add some water if the mixture is too thick. 

To poach the eggs:
If you do not know how, follow a cookbook, an online video, or ask your family for help.

To assemble the dish:
Set the eggs on a plate.
Top with sauce.
Garnish with a few reserved pine nuts if desired. 


*Note on garum: Garum was a strong-tasting fermented Roman fish sauce. A similar preparation was known as liquamen. In fact, both words have sometimes been used synonymously at various points in history. Garum was used in cooking, but it was also a very popular condiment throughout the Roman world. There are recipes online for making modern garum (or garum-like preparations), but there are also substitutes that you can use to give you a sense of how a Roman recipe might have tasted. Vietnamese or Thai fish sauce will work. There is an Italian fish sauce called colatura di alici that is thought to taste a lot like garum and can be gotten at some specialty stores. For a recipe like this, however, you can try grinding in an anchovy and a few raisins, a little soy sauce, or even a splash of Worcestershire sauce (although the flavor will be less accurate).
